Premium eco-friendly and sustainable caviar from de Val d’Aran

In March, the 5th annual Caviar Month will take place in the Val d’Aran. From the 6th – 29th of March, 9 Aranese restaurants will offer exclusive menus featuring caviar Nacarii.  Caviar Nacarii is a locally produced caviar that boasts the quality assurance guarantee of the Val d’Aran.

The Aranese produced caviar has been recognised by chefs for its authentic flavour, freshness, purity and transparency. It comes from the cold, pure and crystalline waters of the Garonne melt and is produced using traditional methods in the fish farm located in the municipality of Les.

Other activities during the month of March will complement the gastronomic experiences. These include a visit to the Les factory to learn about the history and process of production, caviar tasting in the shop in the centre of Vielha or to immerse oneself in the waters of the Baronía de Les spa and learn about the treatments made with caviar from the Val d’Aran.

The month of caviar is organised by the Conselh Generau d’Aran and Torisme Val d’Aran with the collaboration of Caviar Nacarii and the Grèmi d’Ostalaria dera Val d’Aran

This menu offers local Aranese flavours with a choice of 3 starters featuring Caviar Nacarii including scrambled free-range eggs with raw truffles and caviar. This will be followed by a deer loin main course and the traditional apple pie with 1973 bourbon vanilla ice cream.

5 courses and a tapas this extensive menu offers you not only a taste of caviar but also of the Val d’Aran sturgeon which you can try with black chanterelles and Iberian bacon.

Restaurant Lits

Restaurant Lits is the only restaurant to pair wine with its exclusive menu. They also offer a choice of 4 starters, 2 mains and 2 puddings so there are plenty of options! Furthermore, they will also feature grilled loin of sturgeon served with thyme soup and mashed potatoes.

The four-course menu at this restaurant is one of the most alcoholic of the selection, starting with a 10g tin of Caviar Nacarii and blinis and ending with 3 types of Baileys for dessert.

At 6 courses, this menu brings a variety of taste fusions including oyster tartare, sea nettle plus caviar and sturgeon with fennel vinaigrette.

Restaurant Er Occitan

This five-course menu ensures you can try both the sturgeon and the caviar. This interesting menu fuses traditional Aranese cooking with Indian spices. Starting with smoked surgeon cream and Iberian pork, main course sturgeon curry and dessert almond cream, pistachio ice cream, cardamom and Chantreuse.

This Peruvian inspired menu also fuses caviar, Aran traditions and Peruvian cooking to bring you this six-course menu. Including Pisco from the Andes and combing tiger shrimp ceviche with caviar Nacarii, this restaurant on the Michelin guide offers a menu you cannot miss!
